Luan Marvão

Luan Marvão holds a bachelor’s degree in Agronomy from the Federal Rural University of the Amazon (UFRA) and a master’s degree in Agronomic Engineering from the Faculty of Sciences at the University of Porto, with a thesis focused on the development and nutritional assessment of kombucha made from legumes. He is currently pursuing a master’s in Food Technology and Science at the University of Porto, expanding his expertise in food science, biotechnology, and laboratory analysis.

His research experience includes publications in specialized journals and presentations at conferences, with an emphasis on innovative food development, biological control, and sensory analysis of food products.

 

He was awarded third place in the Ecotrophelia Portugal 2025 competition for the development of BRIZA, an alcoholic kombucha created using repurposed orange waste.

Currently, he is a research fellow in the VIIAFOOD project, focused on the classification and quantification of polyphenols and vitamins in pulpy juice and chocolate matrices.
